Hmmm. Would Zombie Ace still be able to use his Fruit Powers? Or are they gone on death? Or would his zombie-body be burned to death upon its initial use. So many questions rise from just the concept.....
Well...Moria usually takes someone's shadow and places is on one of his Zombies (prepared by Dr. Hogback).
The Zombie's personality is "mosttly" that of the one whose body its using...with some traits taken from the shadow doner. An example is how Ryuma's Zombie basically acted like the real Ryuma, fought with Ryuma's style...but had Brook's laugh.
However, I don't know if a dead body still keeps the DF ability after the person dies, so...

Logia users are much more dependable of their powers than Paramecia users are. As much as Ace worried about "staying in shape" after eating his Logia fruit, its illogic to think that he would still be as good in hand-to-hand combat, as a guy who uses nothing but that.
Luffy's DF increase his reach and open up a world of possibilities, but even without it, he's one hell of a hand-to-hand figher. Without his DF, Ace doesn't stand a chance.

Since only one person can have a given power at a time, and (IIRC) a new fruit for the power grows after the previous user dies, no. The corpse wouldn't keep the DF ability.
